做法:春笋切(qiē )成片(piàn )后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
