做法:春笋切成片(piàn )后加(jiā )少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
