做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
