做法:春笋切成片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
