做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
