做法:春笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
