做法:春笋切成片后加(jiā )少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
