做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开(kāi )后转中火。煮到水快熬(áo )干(gàn )的时候(hòu )加(jiā )入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
