做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大(dà )火(huǒ )煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
