做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入(rù )少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转中火。煮(zhǔ )到水快熬干的(de )时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖上(shàng )锅盖焖。
