做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转中火(huǒ )。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
