做(zuò )法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时(shí )盖上锅盖焖(mèn )。
