做法:春(chūn )笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的(de )时(shí )候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅盖焖。
