做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞(lāo )出(chū )后用清水浸泡(pào ),生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清(qīng )水半掩住春(chūn )笋(sǔn ),盖上(shàng )锅盖大(dà )火煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
