做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖上(shàng )锅盖焖。
