做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转(zhuǎn )中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
