做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
