做法:春笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
