做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒均(jun1 )匀稍(shāo )收汁时盖上锅盖焖。
