做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖(gài )焖。
