做法(fǎ ):春(chūn )笋切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上锅(guō )盖焖。
