做(zuò )法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖(gài )焖。
