做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
