做法:春笋切成片(piàn )后加少许盐捞(lāo )出后(hòu )用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀(yún )稍收汁(zhī )时(shí )盖上锅盖焖。
