做法:春笋切成(chéng )片后加(jiā )少许(xǔ )盐(yán )捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱切成段(duàn )。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
