做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻(fān )炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖(gài )大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
