做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒(dǎo )入(rù )2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
