做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖(gài )上(shàng )锅盖焖。
