做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干的时(shí )候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
