做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
