做法(fǎ ):春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡(pào ),生姜切(qiē )片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮(zhǔ )到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
