做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
