做法:春笋切成(chéng )片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入(rù )少量清水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖(mèn )。
