做法:春(chūn )笋切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
