做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
