做法(fǎ ):春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的(de )时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
