做法:春笋切(qiē )成片后加(jiā )少许盐捞出(chū )后用(yòng )清水浸(jìn )泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到(dào )水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
