做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
