做(zuò )法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
