做法:春(chūn )笋切成片后(hòu )加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
