做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生(shēng )姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀(yún ),加入少(shǎo )量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖(mèn )。
