做法:春笋切成片后加(jiā )少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒入2勺(sháo )油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
