做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱(cōng )切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
