做法:春笋切成片后(hòu )加(jiā )少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到(dào )水(shuǐ )快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
