做(zuò )法:春笋切成片(piàn )后加(jiā )少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽(chōu )、蚝油(yóu )翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖(gài )焖。
