做法(fǎ ):春笋切成片后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
