做法:春笋(sǔn )切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生姜切片(piàn ),葱(cōng )切(qiē )成段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
