做(zuò )法:春笋切成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火(huǒ )。煮到水快熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖(mèn )。
