做法(fǎ ):春(chūn )笋切(qiē )成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖(mèn )。
