做法:春(chūn )笋切(qiē )成片(piàn )后(hòu )加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮开(kāi )后转中火。煮(zhǔ )到水快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
